It has been almost 2 months since I started a vegan diet. I have only "cheated" a few times and quickly learned it was a bad idea to "cheat".
The first was due to some peanut butter cookies I just couldn't resist. The taste of homemade peanut butter cookies (with milk & egg) was wonderful. The first day I had some abdominal pain but they tasted sooooo good. The second day I had more abdominal pain and I was extremely sleepy. After a 4 hour nap, because I couldn't keep my eyes open at 5pm, I then slept all night and late into Saturday morning. As I continued eating the cookies the abdominal pain and sleepiness continued. I started to put two and two together and realized "this is how I was before removing dairy and eggs from my diet". I guess you could call it a "lightbulb moment".
The second offense involved naan bread. I was told it didn't have milk or eggs in it but I'm not so sure. It caused uncomfortable abdominal problems and sleepiness. Naan bread is delicious and chewy. I will make an effort to make some homemade vegan naan bread as soon I get a pizza stone.
After watching Fat, Sick, and Nearly Dead I decided to try juicing. I am interested in juice fasting but I am not sure it is right for me at this point. Juicing is a great way to get more vegetables in my diet. I am the only vegan in my family which leads to me cooking numerous meals at dinnertime. Juicing is a fast and easy way to add nutrition to my dinner.

I love my kitchen gadgets. My absolute favorite is my artisan 5qt red Kitchenaid mixer. I actually decorated my kitchen around it. I remember the day I brought it home....my kids were amazed by it and would sit at the bar to just watch it mix the cookies.
Recently, in an effort to conquer my grandmother's wonderful bread recipe I have been baking a lot of bread. My grandmother made the best rolls I have ever tasted but for some reason no one has been able to be successful with her recipe. I have been playing around with the recipe and I am getting very very close. This is where my Kitchenaid comes in...it is wonderful at kneading the dough. I am finding the 5qt to be a bit limiting with the amount of flour it can hold and I have added a 6qt to my kitchen wishlist. Today I discovered a great contest through facebook to win a 7qt mixer. Wow! I can only imagine what I can do with a 7qt! This is definitely my dream mixer.

I have 2 four legged babies.
First meet "her royal highness"...better known as Angel. She is almost 11 and very set in her ways. My favorite feature of the maltese are the big beautiful dark eyes.

The baby of our family is our 14 month old dalmatian, Chance.....aka demon child, booboo, and/or doofus (just to mention a few, he literally answers to anything..lol). YES...those are brown spots. Chance is a liver dalmatian. As I mentioned with Angel I am sucker for eyes and liver dals have beautiful eyes.

Today is the first day of my couch 2 5K challenge. The program is 3 days a week for 9 weeks. This week is warm up 5 min followed by 8 sets of running 1 min walking 1.5 min and then a 5 min cool down. It was a little harder than I expected but I did it. There are many apps out there to help get started with a couch 25k program, I used the "get running" app on my Iphone.

In June my bloodwork revealed that I have food allergies to dairy, eggs, kidney beans, & green beans. Since my visit to a dietician in May I have limited my meat intake to chicken, turkey, & fish (with the occasional pork, which I like but it was off limits according to the dietician).
I am having a lot of problems with acid reflux & abdominal pain. I have read that plant protein is easier to digest than animal protein and I not a big meat eater anyway....so I have decided that I am going to try a 30 day vegan challenge. I have been off of dairy & eggs for 2 months which has made a difference in how I feel. Today is Day#5 of eating vegan.

After a lifetime of fatigue and not feeling well....and a long year of being very sick....I am ready for a change.
My change in a healthy direction actually started a few months ago in March 2011 after having my gallbladder removed. I expected a magical recovery where I felt like a normal person but that didn't happen for me. Vitamin D deficiency, food allergies, Barrett's esophagus, damaged esophagus, extreme acid reflux, back pain, migraines, fibromyealgia and more have led me to the decision that I need to make some drastic changes in my life physically, emotionally, and spiritually.
This is my journey to a healthy & peaceful life....
